Lollipops with wine

Le Rocher is an artificial cave carved into the limestone of the Jura ridge in Olten. Comprising four chambers and a tunnel, it offers a complex sensory environment. Sound, light, temperature, texture, and the altered perception of time shape the experience of moving through the subterranean space.
My contribution to the event began with bacteriological analyses conducted in collaboration with the Institute of Food, Nutrition and Health, ETH Zurich. I wanted to investigate whether the cave had once been used to store fermented beverages such as wine or beer. Although the results were negative, the act of sampling its surfaces became the focus of my research. Using silicone molds taken directly from the cave walls, I cast edible lollipops that replicated their textures. The recipe consisted of young red wine, cream of tartar, and sugar.
During the concerts, visitors were invited to taste the lollipops and explore the cave through their tongues, transforming an archaeological gesture into an intimate sensory encounter.
